So I was told by my husband today that yesterday really wasn't Veterans Day...it was actually on Sunday, but was "observed" yesterday. So just to clarify my post from yesterday, I wanted to make that known. :)
On to baking...My house is filled with a fall smell....PUMPKIN!!! I am baking these awesome Pumpkin Cookies w/ butterscotch chips in them with some pumpkin icing to go on top....yummmeeee!!! My mom use to make them when we were kids so making them sure does take me back to simpler times! Ooooh to be a kid again! I am making them for a Relief Society Fireside tonite. The YW are suppose to bring a Fall dessert of some sort and since I am a leader in there we were ask to also bring one. So I thought these would be a hit...we shall see. :) Here is the recipe and some photos to go along with...
Pumpkin Cookies
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 tsp baking soda
1 tsp cinnamon
2 tsp pumpkin pie spice
6 oz bag butterscotch chips
Preheat oven to 375. Cream together shortening, sugar & pumpkin. (it will be lumpy) Add egg & mix. Add all dry ingredients and mix. It will now be nice and smooth when done mixing. Then add chips. Bake for 10-12 min. Cool before putting on icing.
Pumpkin Icing
3 Tbsp butter
4 tsp milk
1/2 cup brown sugar
1 cup powdered sugar
3/4 tsp pure vanilla extract
1 Tbsp pumpkin
